This is a modern take on a classic recipe – pasta with goat’s milk and eggs – with a different shape: Gemelli.

We produce our pasta from the highest quality traditional Greek variety of durum wheat called “Mavragani”. The grain is stone ground into flour in order to maintain all of its natural characteristics.

Our pasta production is made in small lots. It is slowly extruded through bronze ies in order to produce pasta with a rough surface and exceptional texture, which helps sauces stick to it.

Finally, the pasta is slowly air dried at low temperatures to preserve the natural aroma and flavour.
